That same day, Christoph Poron, the Plantin executive who bought truffles from Laurent Rambaud, the man who gunned down Ernest Pardo, wandered the market in Richerenches, glad-handing négociants and gleaning intelligence about the day’s pricing. I had met him at the company’s warehouse the previous afternoon—a squat building in the middle of the countryside so discreet that I blew past it several times before finding the driveway.

When we finally crossed paths in the middle of the commotion the next morning, he asked me if I wanted to see something. “We’re gonna meet some farmers that we work with regularly,” he said, pacing away from the open vans on the public market, as I followed. “We don’t buy here because we don’t want people to see exactly the quantities we’re buying from them. Because…this market is about secrecy, you know? I mean, the more discreet you are, the better you are. These are the people to talk to. The truffles are very nice, and you’ll see the quality as well. Really, really good.”

“You follow me,” he said, giggling, and then got into his Volkswagen.
